What goes up must go down

What a week!  I just ended a 7 day work week this morning...I had 1 morning, 3 afternoons, & 3 midnights.  Even though this weekend will be short a day, I'm so glad that's over with because next week I only have a 5 day week and a 4 day weekend filled with College Station fun!

Aside from some crazy days at work, this week definitely had some ups & downs.  I started it with an up and made chicken tortilla soup with my mom.  Nothing says fall in Texas like tortilla soup.

My family recipe:
1 small can chopped green chiles
1/4 c olive oil
4 corn tortillas cut into strips
1 large onion chopped
1 med green pepper chopped
1 can diced tomatoes
1 chicken breast cooked & chopped

3 clove garlic minced
4 c chicken broth
1/2 tsp cumin
1 tsp liquid smoke
1 T cilantro 1/2 T parsley
salt & pepper to taste

It's very simple -- you just saute the green chiles, onion, green pepper, & garlic in the olive oil...then add the remaining ingredients (except cilanto & parsley).  Bring to boil & simmer for 20 min.  We then crisp up some of the tortilla strips in a separate pan (or you could just use some store bought chips) & then stir them in with the cilantro/parsley.  Top it with cheese, low-fat sour cream, avocado, etc.  A hearty & warm dish!


Unfortunately, with most 'ups' comes a down.  I had a highly anticipated "blind" lunch date.  I had met this guy briefly many months ago, but our mutual friend insisted we meet up for lunch.  I met him at a cute little pub before I went in for my afternoon shift.  This guy looked super good on paper - good job, a new home owner, a couple years older than me -- the only thing I was apprehensive about was his choice of college (which will remain nameless) because I really dislike this particular school/state.  So anyways, I originally thought it went well (there were a couple of negative things I later realized) -- but we had lots of similarities & convo was not awkward.

When it came time to leave he didn't mention getting together again or following up - but I didn't think much of it.  Days have passed and not a word from him...but I realize it's probably for the best.  I'm guessing he just didn't feel a connection, or more than likely, he was just doing our friend a favor with meeting me, but had no real interest.  I'm definitely not used to being the one getting 'played', but such is life in the dating world!  I realize all these little experiences just create the path for me to meet the right guy.  As painful as it is to walk that path sometimes, I know it's not about my timing, but rather His.  I was able to go to adoration this week and had a very overwhelming feeling of just to be patient and calm.  And luckily, that is something I'm very good at.

On a less serious note, I ended this week with an 'up' doing some pumpkin carving with Matt .. and my favorite, making pumpkin seeds.  I carved Happy Halloween in mine, but you can only see the happy part...so it just looks like it says Happy haha.

  2. Carving pumpkins is a lot harder then I remembered it, plus I was too lazy to go out and buy a kit so I just used a steak knife. Definitely made it a lot harder. And it roted super fast! They never did that in Dallas, but here it took 3 days and it was growing mold onto the outside. Uck.

    That soup looks really good!!! I'm going to try to do some cooking this week and I might try that!

    Same thing happened to me right before Michael and I started dating. It was the first time I had been asked out by a guy I was head over heels for. I was so excited, and I thought it went really well, and then natta. Very awkward at school for a week, and then I finally asked if we were going to be just friends. But then came along Michael when I least expected it. Hang in there girl, he's out there!

    mine is almost about rotted too -- even with this drier air lately, they just don't last too long down here! haha I tried carving out Halloween but my steak knife didn't do it justice. Those people who are crazy good pumpkin carvers deserve some sort of award because it is hard!

  4. um your pumpkins look amazing! i carved pumpkins last year but when it got all nasty looking i was the one that had to throw it away soooo i avoided that experience this year... :)

    i anticipate ktb reunion to be quite the improvement :) :)
