Mexican Maddness

So today I had a little brother/sister bonding time with my brother. We surprised my parents with dinner. We went grocery shopping and cooked pretty much all afternoon. Our surprise -- chicken fajitas. Not very creative living in Texas but actually really good! I was inspired by the Pioneer Woman's salsa I saw yesterday (which of course we also made). I also put my new camera to the test and snapped a few shots.
This was all the stuff we put in our marinade. We made it up and it actually made the chicken taste really yummy and didn't dry it out!
Matt and I decided to be daring --- we put in a WHOLE jalapeno in our salsa, seeds and all. We would later regret that decision -- it turns out fresh jalapenos are wayyyy hotter than those pickled in-a-jar ones I usually use. We ended up dumping half the salsa and diluting it with more tomatoes. Still had a kick but not nearly as bad as the first batch.
Food processor pre-blending up the salsa....I was really bad about taking pictures before/after...I have just a mix of different shots and blurry ones of chicken that I can't post b/c I have no idea what I'm doing with this camera yet haha

And, as previously mentioned, the final product pictures were blurry BUT they tasted fantastic and I leave you with a shot of my pup, Molly. She already hates my camera.



My job fair yesterday went well -- I've never seen the family center at our church so packed before (and I've been to a lot of after-mass coffee and donut gatherings in my lifetime). It's so sad to see how horrible the state of our economy really is. I didn't fully comprehend it until I saw how many, and all walks of life, jobless yesterday. Makes me fully appreciate having a paycheck, as much as I complain of the circumstances and hours. I talked to a ton of companys...most of who want 10+ years of experience, and males, sooo that party wasn't cool. But...it's all about getting that resume out there. I set myself up with a head hunter and on Monday will have more info. I have to constantly remind myself to walk by faith, not by sight.

And on that note, off to work I go...2 midnight shifts and my weekend starts Sunday. Ciao!

  1. i'm glad your job fair went well :) and thats so exciting about your new camera!! i've always wanted a digital slr

    of course, the pioneer woman salsa looks delicious :) love her... :)
